Miso Honey Glazed Pork Ribs

I came up with this recipe for my housewarming party. Turned out great. I did slightly overcook mine however. We got new appliances and I am still trying to get used to my convection oven.


Ingredients:

  • Two racks pork spareribs
  • 1/2 cup white miso paste (shiro miso)
  • 1/2 mirin
  • 3/4 cup soy sauce
  • 1/4 honey
  • 1/2 cup water
  • 1 cup finely chopped long green onion
  • 1 cup roughly chopped garlic
Method:

1. Trim off the silver skin from the spareribs. That's the gnarly membrane on the inside of the rack of ribs. It becomes tough as you roast it. Then place the ribs into a large bowl or container.
2. Combine the miso, mirin, soy sauce, honey, water, long green onion and garlic in a bowl and mix well to combine to make the marinade.
3. Pour the marinade onto the ribs and rub it in making sure that all surfaces are coated.
4. Refrigerate and marinade overnight.
5. Preheat the oven to 350 degrees
6. Place the ribs in roasting pan and cover the roasting pan with a aluminum foil. Reserve the marinade and refrigerate until just before the ribs are served.
7. Roast for 4-5 hours in a conventional oven or 2-3 hours in a convection oven.
8. At 20 minutes before the ribs are done roasting, place the reserved marinade in a small sauce pan and bring to a boil on medium heat. When the ribs are done, brush the heated marinade over the ribs and serve hot.
NOTE:  It must be a rolling boil in order to kill off any bacteria before it can be safely consumed.
